Sugars Day 2 and 3
I missed day 2, oops!
Day 3:
We used isomalt (a sugar that can be cooked very hot, and does not crystalize easily) to make a base for a small showpiece. We pulled the sugar in a way that made a series of small tubes within the piece. It sort of looks like a bundle of coffee straws together.
Looks like grits doesn't it?
Do you see the really long piece of sugar stretching all the way around the table?
In case you were wondering, 340 degree sugar under a heat lamp is very hot! Imagine that...
