On days 8 and 9 we worked on our practical cakes. We each had to make one large entremet and 4 petit gataeux. We were allowed to make any flavors we want, and any decor. The more difficult the choices, the more points you could recieve. There was virtually no time for photos during prep, so here are the final products.
My petit gataeux:
Banana Foster Mousse
Almond Cake Wrap on the outside
Chocolate Rum Soaked Cake
Shortbread Disk
Caramel Filling and Glaze
Brulee Bananas
and Ugly Chocolate Roses (these were required)
Large Entremet-
Shortbread Disk
Raspberry Jam
Lemon Soaked Vanilla Cake
Lemon Basil Curd
Raspberry Filling
Raspberries
Raspberry Basil Mousse
Raspberry Glaze
While this doesnt seem like that much work for two days, it was actually rather challenging. Every component had to be made individually, and every table (three girls) had to share one mixer and mixer bowl. This means that every component we had to either stager to use the mixer or do by hand. This led to lots of mishaps. Thus, these finished products......

Entremets Day 7
This is an Irish Cream and Vodka Mudslide Cake. The top is vodka mousse with the chocolate spray . It was kind of a fun one, with the rounded interior.
